Super Garlic Chicken

This is for the garlic lovers. Garlic is my favorite seasoning. so naturally cramming a ton of garlic into one dish is a great thing to do. This is a very simple chicken recipe. This goes amazing with a simple steamed vegetable or a salad like the grilled pear and candied pecan salad. If you let the chicken cool then you can toss the chicken in with the salad for a great protein filled lunch. This recipe makes 6 – 6 oz portion sizes which means you can have plenty of leftover chicken to make other meals out of.

 
Ingredients:

  • 2 lbs chicken breast

  • 3 bulbs garlic

  • 1 tsp thyme

  • 2 Tbsp olive oil

  • 1 tsp ground rosemary

  • 1 tsp salt

  • 1 tsp chives

  • 1 tsp paprika

Steps:

  1. Heat oven to 400 degrees

  2. Mince garlic fine

  3. Mix olive oil, garlic and all spices in a bowl and set aside

  4. Slice chicken into 1/2 inch strips

  5. Place chicken in a baking dish and spread mixture over chicken.

  6. Cover and cook for 30 minutes. Take the lid off for the last 10 minutes if you would like the chicken browned.

  7. Pair with steamed veggie or salad

205 calories per serving, makes 6 - 6 oz portions
