Sun Flower Butter Cups


This is a different healthy take on peanut butter cups. You can use any sort of nut butter you would like in these. I made them with sunflower butter since it is generally less of an issue for many people with allergies or food sensitivities. This recipe is also okay to have when you are on a candida diet/cleanse but anyone can enjoy this if they want a cleaner version of a peanut butter cup.  I understand how difficult it is to have to give up all kinds of enjoyable foods when you have food limitations (especially a candida cleanse). With recipes like this, your healthy journey can not only be easier but much tastier!

The Bottom Layer

  • 3 tbsp. coconut oil

  • 4 tbsp. coco powder

  • 1/2 tbs. stevia liquid

  • About 20 mini muffin paper cups

The Top Layer

  • 6 tbsp. sunflower butter

  • 2 tbsp. coconut oil

  • 1/4 tsp. cinnamon

  • Pinch of cayenne

  • 1 tsp. vanilla

  • 1 tsp. stevia

  1. In a pan, melt coconut oil and then whisk in coco powder. Next, add stevia and whisk well. You do not have to keep it cooking after it is mixed.

  1. Spoon 1/2 tbsp. of chocolate into each mini muffin cup.

  1. Stick in the freezer for a few minutes until solidified.

  1. Warm up the nut butter and coconut oil in the microwave for only 30 second to a minute. Just until the coconut oil is melted and everything is soft. Add in all the other ingredients and stir well.

  1. Add 1/2 tbsp. of nut butter mix on top of the chocolate in muffin paper cup. Smooth the top enough that the nut butter covers the whole chocolate bottom evenly.

  1. Let them cool again. I like the freezer because they set up so fast.

  1. Keep them in the freezer so you can just grab a few out at time. If you are going to use them all at once, at least keep them in the refrigerator until you are about to eat them.
