  Strawberries and Creamy Jello Parfait


This is a dessert that even the non health food enthusiast will like, I know, I tested it. Food should be delicious, healthy and beautiful at the same time. It is also a pretty easy to put together. This dessert is made with Greek yogurt that is not heated so it retains all the good probiotics found in it naturally. You can substitute another sweetener for the stevia if you like.


  • 2 Packages unflavored jello

  • 16 Large strawberries

  • 1/2 Cup water

  • 1/2 tsp stevia KAL brand in liquid form

  • 1/8 tsp stevia KAL brand in liquid form

  • 1 Cup Greek yogurt

  • 8 Tbsp Strawberry Jam


    1. Chop up 6 strawberries and mix it with the 6 Tbsp jam and set aside.

    2. Slice up 5 strawberries lengthwise for the edges of the dessert you see in the picture. Set aside

    3. Cut the stem out of 5 large strawberries and combine them, 1/2 cup water and 1/2 tsp stevia to the blender and blend until smooth.

    4. Heat the blended strawberry mixture up for a couple minutes in the microwave.

    5. Add the 2 jello packages to the strawberry mixture and whisk well.

    6. Add 1/2 cup of Greek yogurt to the strawberry mixture and whisk till smooth.

    7. Pour 1/4 of the strawberry yogurt mixture into the bottom of each of your desert cups Press slices of the strawberries firmly against the edges of the dessert cups and slide down into place and then set in the freezer for just a minute to let the first layer firm up.

    8. After the first layer has firmed up spread 2 Tbsp of the Jam onto each yogurt layer.

    9. Pour the remainder of the strawberry jello mixture into each dish and stick back in the freezer for a few minutes until firmed up a bit.

    10. Add the remaining Jam on top of the jello layer.

    11. Mix the remaining 1/2 cup yogurt and 1/8 tsp stevia until smooth. And spread on top of the desserts.

    12. Garnish with added strawberries or edible flowers on top if you like.

    This makes two big cups worth. Each cup has 238 calories.
