 Spiced Pumpkin Pancakes

Do you ever wake up and think “I am an adult, I can have pumpkin pie for breakfast if I want to?” Well this is like having all that pumpkin goodness for breakfast but feeling like a responsible adult at the same time. These taste like the holidays but you can have them year round. These are very hearty pancakes. If you have a big appetite two will do you, if you are a light eater aim for one. The day I made these I ate two and lasted 5 hours and a 3 hour hike on just the two pancake before I started getting hungry again.

Ingredients:

  • 1 Cup pumpkin puree , canned or fresh
  • 2 Eggs
  • 1 Tbsp cinnamon
  • Dash of sea salt
  • ¼ tsp nutmeg
  • 1 tsp stevia
  • 1/8 tsp allspice
  • ¼ tsp cloves
  • ½ tsp ginger
  • 1 Tbsp finely ground orange peel (If you don’t have this, just leave it out)
  • 1/2 tsp baking powder
  • 1 Tbsp coconut oil
  • 1 Cup almond flour

Optional Glazing:

  • 2 Tbsp coconut oil
  • 1/4 tsp stevia
  • 1/4 tsp maple flavoring
