Southwest salad

Whoever says that salads are boring and not filling have not really given it their all. This is the taste of a fiesta in a salad, or at least that is the aim, and it is super filling. If you like spicy then add some minced jalapenos to this or some extra cayenne to the dressing.

Salad Ingredients

  • 3 Cups lettuce

  • 1/2 Cup of corn

  • 1/2 Cup of black beans

  • 1/2 Tomato

  • 1/2 Avocado

  • 1 Green onion

  • 1 Bell pepper

  • 1/2 Cup shredded chicken

  • 1/2 Cup chopped cilantro

Smoky Southwest Dressing Ingredients

  • 1 tsp fresh minced garlic

  • 1 tsp fresh minced onion

  • ½ tsp lemon juice

  • ¼ tsp apple cider vinegar

  • ½ Cup full fat Greek yogurt

  • ¼ tsp powdered garlic

  • ¼ tsp salt

  • 1/8 tsp celery seed

  • ¼ tsp black pepper

  • ¼ tsp parsley flakes

  • 1/8 tsp thyme

  • ¼ tsp dried mustard

  • 1 tsp onion powder

  • 1/8 tsp cayenne

  • ¼ tsp chili powder

  • ¼ tsp smoked paprika

  • 1/8 tsp cumin

Steps

  1. Mix all the dressing ingredients in a bowl and let sit for at least 10 minutes if you can.

  2. Shred lettuce

  3. Cut up bell pepper, avocado, green onion, cilantro

  4. Toss all the ingredients in a bowl with dressing


Makes 2 salad at 307 calories each
