Simple Cucumber Tomato Salad

I love easy recipes that make vegetables different and delicious. This recipe has very few ingredients and is super simple to throw together.

Apple Cider Vinaigrette

  • 1/2 Cup Apple cider vinegar

  • 1/2 Cup Olive oil

  • 1/4 tsp Ground rosemary

  • 1 tsp Dry mustard

  • 1 tsp Onion flakes

  • 1/2 tsp Onion powder

  • 1/2 tsp Garlic powder

  • 2 Cloves fresh garlic

  • 5 Drops stevia. You can use 1 tsp honey instead if you prefer.

Putting it Together

Mince garlic fine and put everything into a jar and shake well. It is best if you can let this sit for at least a couple of hours so all of the spices can mix well.

The Salad

  • 1 Cucumber

  • 2 Tomatoes

  • 1 Handful basil

  • 1/2 Cup Apple cider vinaigrette

  • Salt to taste

Putting it Together

  1. Peel cucumber and cut in half lengthwise and the cut into 1/4'' slices
  2. Chop tomato
  3. Cut basil into medium pieces
  4. Place all the vegetables, basil and vinaigrette in a bowl and toss.
  5. Add just a pinch of salt at a time until you achieve the amount you want

There is about 546 calories in the entire bowl (That is if you drink all the dressing left in the bowl too) You can also make this a leaner salad by cutting down the amount of oil in the dressing.
