Red Enchilada Sauce
I love enchilada's with red sauce but most restaurants make their sauce with flour. Not a big deal to some but for people with Celiac's, or just simply people with grain sensitivities that is a big deal. Rather than giving up my enchilada sauce I decided to remake it a bit. This is thickened with arrow root powder, but if you have another thickener you like using, you can always use that instead.
Ingredients

1/2 Cup New Mexico red chilli powder

2 Cups beef stock

1 tsp cumin

1 Tbsp onion powder

1 Tbsp garlic
-
1 Tbsp arrow root powder

1 Tbsp olive oil

10 Drops liquid stevia or a tsp or honey

1/2 tsp salt
Steps
Whisk all the ingredients together and cook on medium heat for about 10 minutes or until thickened.
