Pumpkin Protein Balls


I love making protein snacks for when I am in a hurry or when I have a sweet tooth, it keeps me from eating things I probably should not. If you are a pumpkin lover then these will be right up your ally. I realize I use coconut in a lot of my recipes, If you do not like coconut then you can just add another 1/4 cup of nuts, you may want to crush them up finer than the pecan pieces in this recipe to imitate the consistency of the shredded coconut. These are suitable for people who are grain free, sugar free, and vegan. If you are not sugar free then just go for real chocolate chips!

Ingredients:

  • 1 15 oz can of pumpkin puree

  • 1 tsp Liquid stevia

  • 1 Tbsp cinnamon

  • 1/8 tsp allspice

  • 1/4 tsp nutmeg

  • 2 Scoops protein powder (I used Vega vanilla chai for this)

  • 1/2 Cup pecan pieces

  • 1/2 Cup unsweetened carob chips or stevia sweetened chocolate chips

  • 1/4 Cup unsweetened coconut

Steps:

  1. In a bowl mix canned pumpkin, stevia, and spices

  2. Stir in carb or chocolate chips and coconut

  3. Stir in protein powder

  4. Divide into 12 even portions and form into balls

  5. You can roll these in coconut and cinnamon or coco if you would like them to have a pretty appearance.


Makes about 12 balls at 98 calories each
