Orange Kale Salad

I love this salad. In fact this is one of the salads I ate as a regular snack almost daily for about a year. It is so simple and kale is such a fibrous vegetable that even if you make it the day before it just gets soft not soggy. Adding chicken goes well with this salad as well. If you do not do any sugar at all you can always exchange the orange juice concentrate with lemon juice and some stevia. This will give you the same level of sweetness without the sugar.

Ingredients

  • 4 cups chopped kale

  • 1/2 cup shredded carrots

  • 1/2 cup raw sliced almonds

  • 2 Tbsp orange juice concentrate

  • 2 Tbsp toasted sesame oil

  • 1 Tbsp fine minced onion

Steps

  1. Mix orange juice concentrate, sesame oil and onion. Set aside

  2. mix kale, carrots, and almonds. Toss with dressing.

Makes 2 serving at 375 calories
