Nutty Granola Bars

This is an alternative to regular granola bars for people who can not eat grains and sugar. These bars are comprised of nuts and seed so treat this as you would when eating regular nuts, in other words don't eat a ton of them. It is meant as a snack not as something to munch on all day long. Although it is best to get a balanced meal, if you are on the run and will not be able to get to a balanced meal, one of these have enough calories to get you through.


  • 1/3 Cup raw pumpkin seeds

  • 1/3 Cup raw sunflower seeds

  • 2/3 Cup raw pecans

  • 2/3 Cup unsweetened shredded coconut

  • 1/4 Cup chia seeds

  • 2 Tbsp butter or coconut oil

  • 1 Tbsp cinnamon

  • 1 tsp stevia liquid

  • 1 tsp vanilla

  • 6 Tbsp Sunflower butter


  1. Melt the butter or oil in a skillet over medium heat

  2. Break the pecans up a little bit and add them into the pan

  3. Add sunflower seeds, pumpkin seeds, shredded coconut and cinnamon

  4. Cook on medium heat for about 10 minutes or until toasted lightly. Add the chia seeds in the last few minutes of cooking.

  5. Remove from heat and add in the vanilla extract and stevia and stir really well.

  6. Mix well with the sunflower butter

  7. Form into 6 bars.

  8. These are best kept cold until you are ready to eat them, otherwise they may crumble a bit

Each bar has 391 calories in it.
