Lettuce Wrapped Pork Tacos

Who doesn’t love tacos? They are one of my favorite foods. But what do you do when you can't have corn or or cheese or beans or rice etc? You find a way around it of course! And that is exactly what I did! You can use any meat you want in these. The recipe I have given you for the chili seasoned pork is obviously way more than you need for this recipe. I tend to cook more meat than needed for a recipe so that I can keep it on hand and use it for other recipes throughout the week, plus you can always freeze the remainder so all you have to do is thaw it out for later use. I like being prepared.

Chili Seasoned Pork Ingredients

  • 2 1/2 lbs lean pork loin or chops
  • 1 TBS Garlic flakes
  • 1 tsp rosemary
  • 1 tsp thyme
  • 3 TBS Chili powder
  • 1 large ball jar full of water

Cooking it

Cook in a crock pot on low overnight. I started mine at 9:35 pm and was finished at 4pm the next day

The Taco Ingredients

  • 8oz Cooked pork

  • 1 Fresh tomato

  • 1/8 Cup Onion

  • 1/4 Cup cilantro

  • 2 Cloves garlic (optional)

  • 1/2 Avocado

  • 4 Tbsp Greek Yogurt

  • 1 Cup shredded cabbage

  • 4 Large lettuce leaves

  • 4 Tbsp Salsa

Putting Them Together

  1. Chop up tomato, avocado, cilantro, and onion and set aside

  2. Finely Shred the cabbage

  3. Mince the garlic

  4. Shred the pork and if it is not hot then heat up it up.

  5. In each lettuce leaf layer 2 oz pork, 1 Tbsp salsa, 1 Tbsp Greek yogurt.

  6. Evenly distribute the onion, garlic, tomato, cilantro and cabbage into each leaf.

This recipe makes 4 tacos. Each Taco has 118 calories
