Lasagna Cabbage Rolls

This came about when I was making my husband lasagna and I was thinking about how I would really like my own version, instead of just watching him enjoy what I was not going to eat. Many people do not realize how much you can do with cabbage. It makes an excellent wrap for people who can not eat corn or grains, like people dealing with Celiac's disease. This is one of my rare recipes that actually has some cheese in it. If you are lactose intolerant then you can always substitute almond cheese, rice cheese or anything you would like. Or you can skip the cheese altogether. This is also a lean option verse the regular type of lasagna.

Ingredients

  • 15 large cabbage leaves

  • 1 cup cooked lean ground beef

  • 2 cups mozzarella

  • 1 cup ricotta

  • 2 cups spinach

  • 5 cups red sauce

Steps

  1. Heat oven to 350

  2. Mix the ground beef with 1/2 cup of the red sauce

  3. heat up the cabbage leaves for a couple minutes in the microwave or steam for a few minutes. You just want the cabbage to be soft and pliable but not over cooked.

  4. Fill each cabbage leaf with 1 Tbsp of the ground beef mixture, 1 Tbsp ricotta, 1 Tbsp mozzarella, and about 10 cabbage leaves.

  5. Roll up the cabbage leaves and top with the rest of the red sauce and the rest of the mozzarella cheese

  6. Bake until the cheese is melted and just starting to brown about 10 minutes

Each cabbage roll has 121 calories
