Kale Salad Cups


Kale is known as a super food, but super foods can also be super delicious. This is so simple, so tasty, so healthy and so pretty. Since these do not have to be heated they make a great lunch to take to work. If you are Vegetarian you can exchange the chicken for chick peas.


  • 1 Cup lose packed baby kale
  • 2 Tbsp Apple cider Vinegarette

  • 2 Tbsp goat cheese

  • 1/2 Cup cooked chopped chicken breast

  • 1 Bell pepper

  • Small handfull of cherry or grape tomatoes (about 5)

Apple Cider Vinegarette

  • 1/2 Cup Apple Cider Vinegar

  • 1/2 Cup olive oil

  • 1/4 tsp ground rosemary

  • 1 tsp dry mustard

  • 1 tsp onion flakes

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 2 cloves fresh garlic

  • 5 drops stevia. Or you can use 1 tsp honey.


Mince garlic fine and put everything into a jar and shake well. It is best if you can let this sit for at least a couple of hours so all of the spices can mix well, if not then let it sit for at least 10 minutes.

Steps for the Salad Cups

  • Cut tomoatoes in half

  • In a bowl toss together baby kale, dressing, and chopped cooked chicken.

  • Cut bell pepper in half lengthwise and remove seeds and stem

  • Fill bell pepper halves with tossed salad mixture

  • Seve with a side of goat cheese if desired

There are 375 calories in this recipe. If you do not use the goat cheese it has 235 calories.
