 Java Chip Yogurt Popsicle

Healthy yogurt mixed with chocolate and coffee flavors makes me very happy! This frozen treat has a tart kick due to the yogurt and is a great beat the heat treat. I love making these types of treats rather than buying them because I can make them with no sugars and clean healthy ingredients. If you are not a huge dark chocolate fan then test out mixing all the yogurt into the coffee layer and leaving out the cocoa. Full fat yogurt obviously is going to have the richer flavor and texture but if you are wanting something leaner go ahead and use low fat yogurt.

Ingredients

  • 2 cups unsweetened yogurt

  • 2 Tbsp instant espresso, regular or decaf

  • 1 tsp stevia if you like yours sweeter, feel free to add more.

  • 2 tbsp coco powder

  • 1 Popsicle tray or ice cube tray

  • 1/4 – 1/2 cup chocolate shavings depending on how chocolaty you want it.

    If you would like to make the shavings from scratch then you will also need

  • 1 – 4 oz bar of 100% unsweetened Ghiradelli chocolate or equal quality chocolate.

  • 1 tsp liquid stevia

  • 1 Tbsp coconut oil

Chocolate Shavings Steps

  1. Melt 1 Tbsp of coconut oil and a 4oz bar of 100% unsweetened Ghiradelli chocolate.

  2. After fully melted mix in 1 tsp liquid stevia

  3. Lightly spray a cookie sheet with non stick spray and spread the chocolate as thin as you can on the sheet evenly.

  4. Stick the cookie sheet with the chocolate in the fridge or freezer and let cool completely.

  5. Once the chocolate is cooled completely and hardened, scrape up with the back of a spatula.

  6. Take the chocolate and chop up until it is at the consistency that you want it.

  7. Keep these shaving in the refrigerator until you use them since they will melt.

Popsicle Steps

  1. In a bowl mix 1 ¼ cup yogurt with 2 Tbsp instant espresso, 1/2 tsp stevia, and ¼ – ½ cup chocolate shavings.

  2. Spoon evenly into either Popsicle trays or ice cube trays. Make sure to push the yogurt down into the trays to reduce air pockets. Leave about 1/4'' space on top for the dark chocolate layer. Stick these in the freezer while you are mixing the next layer.

  3. In the same bowl mix 3/4 cup yogurt, 2 Tbsp cocoa powder and 1/2 tsp stevia.

  4. Top all the Popsicles evenly with this chocolate layer.

  5. If you are using a ice cube tray then stick some toothpicks in each ice cube opening. Stick them in the freezer and leave over night.  

Makes 8 Popsicle which have 75 calories each.
