Grilled Peach & Yogurt Tart

This is a very fresh summer dessert and it looks really fancy for company. Tarts look very complex but I have found that they can actually be really easy to make. The crust still crumbles apart so you are better off leaving the dessert on the pan you cook it in. This is one of only two recipes that have any grain in it, for a grain free version use 2 cups of nuts instead of oats.

Ingredients

  • 2 tsp stevia

  • 2 Cups thick old fashioned rolled oats

  • 1 Cup unsweetened coconut

  • 2 Tbsp coconut oil

  • 1 Egg

  • 24 oz Greek yogurt

  • 1/8 tsp cinnamon and nutmeg

  • 4 Peaches

Steps

  1. Heat oven 350 degrees

  2. Toast coconut and oats in a skillet with the coconut oil until browned.

  3. Mix oat mixture with 1 tsp stevia and 1 egg press into a deep dish pie pan or a spring form pan.

  4. Cook crust for 20 minutes. Let cool.

  5. Cut the peaches in into 12 slices

  6. Spray a skillet with non stick spray and grill peach slices on medium heat until lightly browned, turn and grill the other side. Let cool.

  7. Mix the Greek yogurt with 1 tsp stevia

  8. Spread the yogurt on top of the crust

  9. Arrange the peaches on the yogurt in a pinwheel fashion on the outer edge of the yogurt, then pile the rest of the peaches in the middle.

Makes 10 servings at 210 calories each
