 Fresh Zucchini Pasta

If you are someone who cannot eat grains, then you understand the pain of not having pasta in your life. But wait – there is hope! Zucchini makes some of the best pasta noodles ever! After having these I do not even miss regular pasta. And the other added benefit? You wind up getting a ton of vegetables in an incredible tasting meal!

I do not use a lot of fancy specialty equipment for my recipes, but when it comes to veggie pasta there is something you want to have. A spiral slicer. They are not expensive and will be an asset to your kitchen. You can order them online easily. You'll thank me for telling you about this!

  • 2 Zucchinis

  • 2 TBSP Olive oil

  • 1/8 tsp Salt

  • 3 Cloves of garlic

  • 2 Tbsp Fresh basil chopped

  • 1/4 Cup tomatoes chopped

  • 1/10 tsp Italian seasoning blend

    1. Sauté the zucchini with Italian seasoning and salt in the 2 TBSP of olive oil over medium heat until soft. Should be about 5 minutes.

    2. Remove from heat and add in all the other ingredients and serve.

    This is so simple, tasty and healthy that it will become one of your go to's!

    This whole meal has about 306 calories in it.
