Egg Salad Stuffed Bell Peppers

Eggs are a very healthy food and when you add in a bell pepper and kale you get a nice mix of veggies, protein and fats. Ever since I have started using bell peppers as alternative for my sandwiches I have not missed the bread at all, beside the colors are much more enticing. For mayonnaise I personally use one called Vegenaise, they have a variety of them, I use the one that is soy free. To me this is the tastiest mayonnaise I have ever found. You can use any color of bell pepper you like, but my favorite are the reds. This is not only good for those who want to get more vegetables in their meals but it is also good for people on a candida cleanse.


  • 2 boiled eggs

  • 1 1/2 TBS Vegenaise

  • 1 green onion chopped

  • 1 bell pepper (color of your choice)

  • 1/4 tsp dried powdered mustard seed

  • 1/8 tsp smoked paprika

  • 1/10 tsp black pepper

  • 1 clove fresh garlic minced

  • 2 small leaves of kale


  1. If you don't already have boiled eggs made then you may want to boil more than two so you can keep extras on hand. Add plenty of salt to the pot of water with the eggs and bring to a boil. Boil for 10 minutes.

  2. Make sure to cool the eggs down as fast as possible, this is what helps the shells come off easier. You can either do this by running them under very cold water for a few minutes or if you have ice available make an ice bath prior to boiling the eggs so you have a really cold ice bath waiting that you can put them in.

  3. Peel the eggs then use a fork or manual hand held potato masher and mash up eggs.

  4. Add mayonnaise, all spices and onions and mix well.

  5. Slice bell pepper in half and take out the stem and the seeds.

  6. Layer the bottom of the bell pepper with the kale.

  7. Scoop the egg salad into each half of the bell pepper.

  8. Sprinkle with some extra paprika if you would like for extra flair.

Each bell pepper half has 176 calories in it. Which means this entire recipe only has 352 calories in it.
