Coconut Macaroons

Coconut macaroons are such a simple yet Delicious dessert. Just because you can't eat sugar doesn’t mean you should have to give up these awesome clouds of coconut deliciousness. These are like the classic macaroon but with stevia instead of sugar, no grains and no dairy.


  • 4 egg white

  • 1/4 tsp salt

  • 1 tsp liquid stevia

  • 3 cups coconut

  • 1/4 cup coconut oil melted

Optional chocolate for dipping and striping

  • 2 Tbsp coconut oil

  • 3 Tbsp coco powder

  • 1 tsp stevia


  1. Heat over to 350 degrees

  2. Beat egg whites, salt and stevia with an electric mixer until frothy

  3. Add coconut oil and coconut to the egg white mixture and mix until just mixed.

  4. Use either a small measuring cup or a ice cream scooper, pack the coconut mixture in really good and then place on a cookie sheet. You may need to give it a good tap against that sheet to get it out.

  5. Press the scoop on the tray down just a bit.

  6. Bake 17-20 minutes

  7. Let cool

    If you want to dip the macaroons in chocolate

  8. Melt the coconut oil in a small sauce pan

  9. Remove oil from heat and add the coco powder to the melted oil and whisk.

  10. Add 1 tsp stevia and whisk well. If the chocolate thickens too much to where it is not smooth anymore just ass a little more coconut oil, until it smooths out.

  11. Let the chocolate cool a bit and then dip the macaroons in the chocolate, set on a cookie sheet and then stripe the top with some of the chocolate as well.

Makes 10 macaroons 140 calories each.
With chocolate about 200 calories each
