Coconut Haystacks

This is a super simple fast recipe. This came about when I had an extreme craving for chocolate and I happened to have plenty of yogurt in house. I threw it together and the bet paid off. This is sweet with still some of the tang of yogurt and is great at satisfying a chocolate craving.

Ingredients

  • 1 Cup Greek yogurt

  • 1/2 Cup unsweetened coconut or toasted coconut flakes

  • 1/2 Cup coco powder

  • 1/2 Cup unsweetened carob chips

  • 1/2 tsp stevia

Steps

  1. Mix yogurt and stevia in a bowl until fully mixed and smooth.

  2. Mix all the other ingredients into the yogurt and drop spoonfuls onto a cookie sheet and cover with saran wrap and set in the refrigerator.

  3. Make sure you keep these covered until you eat them since they will dry out and crumble otherwise.

Makes about 16 haystacks that are 51 calories each
