Chocolate Nut Clusters

I love these because they are so easy, yet so versatile. I use stevia but you can always use honey or some other sweetener as well. You can use any kind of nuts you would like in these and if you want more of a kick to them then use more cayenne. These are a clean alternative to many chocolates out there but they do have a lot of nuts in them so they are still high in calories, So don't eat all of them in one sitting, I know that is hard not to do.

  • 1 Tbsp coconut oil

  • 1 4 oz Ghirardelli chocolate bar unsweetened

  • 1 Pinch of cayenne pepper (optional)

  • 1/2 tsp vanilla

  • 1 Pinch of sea salt

  • 1 tsp of liquid stevia

  • 1 Cup of nuts ( I used raw macadamia nut in the ones you see here)

  1. Melt coconut oil in a sauce pan

  2. Add chocolate and melt.

  3. Remove from heat and add all the other ingredients.  If the chocolate seems too thick and is clumping up just add a little bit more coconut oil and it will smooth out.

  4. Drop in spoonfuls on a baking sheet, pie pan, or in mini cupcake papers. and stick in fridge to cool. You can also smooth out flat on the baking dish and cut them when they are cooled off.

  5. Keep these in the fridge until you are ready to eat them since they can melt a bit.

Makes about 12 (depending on the size you make them and the nuts you choose) at 111 calories each.
