Chicken Salad Topped Tomatoes

This is a simple, easy and delicious lunch. Pumpkin seeds add an awesome crunch and texture to this chicken salad. For an added kick you can also add in a little bit of fresh minced garlic.

Ingredients:

  • 1 - 10 oz can of chicken or 10 oz fresh cooked chicken

  • 2 Tbsp mayonnaise of your choice (I like Vegenaise)

  • 1 Tbsp pumpkin seeds

  • 1 Green onion

  • 1 Pinch of pepper

  • 1/2 tsp dry mustard

  • 3 - 1/4'' Slices of tomato

Steps:

  1. Drain the liquid from the can of chicken

  2. Cut up the green onion

  3. In a bowl mix the chicken, mayo, pumpkin seeds, pepper and mustard powder

  4. Spoon onto the tomato slices

Makes 3 tomato stacks that are 172 calories each
