Bell Pepper Taco Cups

Bell peppers make the perfect container for ground turkey taco fillings. This recipe makes enough servings that you can serve it to your whole family, a group of friends, or just have plenty made for yourself to eat later. You can do beef, turkey, buffalo or really any ground meat that you want. If you are a vegetarian then you can do beans and rice instead of the meat. Avocado is a healthy fat, although if you would like a leaner option you can always leave off the guacamole and Greek yogurt. As you can see these are very versatile.


1 lb Ground beef or turkey

1 & 1/2 Tbsp Garlic

1 Tbsp Onion powder

1 Tbsp Chili powder

1/2 tsp Salt

3 Bell peppers (I like red)

1 Can Black beans (optional)

1 Avocado

6 Tbsp Greek Yogurt

1 Cup Salsa

1 Tbsp Minced onion


  1. Scoop out the avocado in a bowl and mash up.

  2. Add the 1 tbsp minced onion. 1/2 tbsp garlic powder and 1/8 tsp salt to mashed avocado and mix well. Set aside.

  3. In a skillet sprinkle meat with 1 tbsp garlic powder, 1 tbsp onion powder, 1 tbsp chili powder, 1/2 tsp salt and cook on medium high heat until browned and fully cooked through.

  4. Add beans into the skillet with ground turkey and cook until heated up fully

  5. Slice bell peppers in half and remove stems and seeds

  6. Fill each bell pepper half with 2 oz of turkey and bean mixture

  7. Top each bell pepper half with 1 tbsp of Greek yogurt, 1 tbsp guacamole, 1- 2 tbsp salsa and a handful of field greens.

  8. There will be extra salsa in case you want more (I like a lot of salsa)

  9. You should have some left over meat and bean mixture that you can use for another meal.
